One thing I’ve noticed during quarantine is that I’ve been cooking and baking from scratch more than usual. It may be partially about wanting to counter the boredom, but partially I believe, it’s the desire for comfort food. I view my increased interest in comfort foods as deeply natural, a kind of “nesting” behavior, and just basic human self-care. This time, my search online landed on brownies and pretty quickly I was lucky enough to stumble across this recipe. This “Cocoa Brownies” recipe is included in bon appétit’s BA’s Best list as one of their “essential” recipes. I agree. So, you can just forget that brownie mix. These from-scratch Cocoa Brownies are worth the effort! So, if you’re like me and prefer a moist and dark-chocolatey brownie, why subject yourself to inferior mix-brownies, when there’s a quick way to fudgy deliciousness. This recipe is both simple and quick (my usual criteria for a recipe) and best of all, no electric mixer is required! The only change I made was the addition of about ¼ cup of chocolate chips, adding even more chocolate goodness. Experiment and enjoy! You might even have a neighbor who would appreciate your sharing of a few surprise brownies at the door.
