Avocado Chicken Salad

Chicken seems to be one of those ingredients that’s often on hand – either frozen or as leftovers. What better way to use it up than to make a chicken salad – but not just any chicken salad!


2 cups shredded chicken
1 avocado, diced
¼ cup diced red onion
1/2 teaspoon garlic powder
1/2 teaspoon cumin
salt and pepper to taste
2 teaspoon lime juice
1 Tablespoon fresh cilantro
1/4 cup mayo
1/4 cup plain Greek Yogurt


Mix all ingredients together. This can keep for up to 3 days in the refrigerator. Serves 4.
